Heat up your biggest stove pot to medium heat and add coconut oil
Add chopped onions and saute for about 3 minutes
Sprinkle with salt and place lid on while it’s sautéing
Add in your garlic, ginger, lime leaves and curry powder and saute for another 2 minutes
Now add in chicken broth, coconut milk, cauliflower, and sweet potato
Cover the pot and bring to a boil, once it starts to boil simmer for 15 minutes on low
Allow the soup to cool a little before placing it in a blender or food processor
Blend and season with salt and pepper to taste!
