Coconut Curry Cauliflower Soup
This one pot recipe is actually very easy and absolutely delicious! Enjoy in a bowl, or as a sauce on your favourite protein + carb at dinner!For the 21 day fix containers: 1 green, 1 yellow, 1 blue, 1 tsp

Ingredients
- 1 large cauliflower – roughly chopped (approx 6 cups)
- 1 medium sweet potato or yam – roughly chopped (approx 3 cups)
- 1 can organic coconut milk
- 6 c chicken stock (I use 4 individual low sodium packets and the ratio is great!)
- 1 inch fresh ginger, grated
- 3 garlic cloves, minced
- 1 onion, diced
- 4 kaffir lime leaves or squirt of fresh lime juice
- 2 tsp curry powder
- 1 tbsp coconut oil
Instructions
- Heat up your biggest stove pot to medium heat and add coconut oil
- Add chopped onions and saute for about 3 minutes
- Sprinkle with salt and place lid on while it’s sautéing
- Add in your garlic, ginger, lime leaves and curry powder and saute for another 2 minutes
- Now add in chicken broth, coconut milk, cauliflower, and sweet potato
- Cover the pot and bring to a boil, once it starts to boil simmer for 15 minutes on low
- Allow the soup to cool a little before placing it in a blender or food processor
- Blend and season with salt and pepper to taste!
Notes
* To make your sweet potato easier to cut through, microwave for 1-2 minutes.
This makes a very generous 6 servings. You can add so many different things to this soup for added nutrients and flavour, like carrots, celery, or yellow beets. Add them before blending and enjoy!
