Mediterranean Chicken Pasta

This recipe came to me via Teanna's facebook Live feed one day - and because of its simplicity, delicious ingredients and quick prep time we now enjoy this on the regular!

Mediterranean Chicken Pasta

You must try for yourself! Like Teanna said, the juice from the tomatoes, spinach and parmesan gives you a tasty and satisfying flavourful sauce – without all the extra calories!

For the 21 Day Fix Container Count: 1 Red, 1 Yellow, 3/4 Green, 1/2 Blue, 1 Tsp 
Servings = 4

Ingredients

  • 4-5 chicken breasts
  • 1/2 pkg of whole wheat spaghetti or pasta of choice
  • 1 medium onion diced
  • 1 C sliced cherry tomatoes
  • 1 C spinach or 2 small frozen cubes
  • Tbsp coconut oil
  • Tbsp garlic (minced)
  • 2/3 C (2 blue containers) parmesan cheese *can be freshly grated or powdered, have both worked well!
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. In a fry pan on medium high heat, melt coconut oil and cook the chicken with salt and pepper and set aside
  2. Boil water and add pasta once water is boiling
  3. In the same hot fry pan as the chicken was in, add in diced onion and sauté until translucent (should pick up flavour from chicken, salt and pepper yummm!)
  4. Lower the heat and add garlic
  5. While the garlic and onion are sizzling, slice the chicken into strips or desired shape/size and set aside
  6. In the fry pan, now add tomatoes, spinach, and any other “remix” veggies you wish to add (remix veggie options are below)
  7. Mix veggie concoction for 3 minutes, and make sure to strain the pasta noodles once they are ready
  8. ***CONTAINER STEPS ALERT! At this point if you are counting containers – I take my plate, and a tupperware container for lunch(es) the next day and scoop 1 Red container for chicken, and 1 Yellow container for pasta to make myself 2 or more yummy meals. The pasta and meat portions above will make more than 4 servings but it is likely you are also cooking for others – or in my case my bf so I make more for him! It is easy if you are only cooking for yourself to scoop the red and yellow portions of meat and pasta 4 times to make sure you’re being accurate and then add in a quarter of the completed concoction below to each prep container. If you are not counting containers – please disregard my ramble above and proceed to step 10!
  9. Add in chicken, pasta and parmesan and stir until thoroughly mixed.
  10. ENJOY!

Remix!

Sometimes there are some veggies that are delicious that need to be used up and I find they can go really well with this recipe! I have added mushrooms, celery, and sun-dried tomatoes for an equally as yummy and nutritious meal – feel free to experiment!
