Low Carb Chocolate Chip Cookies

Ingredients
- 3 cups almond flour
- 1 tbsp collagen gelatin powder
- 1 tsp baking soda
- ½ tsp sea salt
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sugar-free maple syrup
- ½ cup melted coconut oil
- 1 cup sugar-free dark chocolate chips
Instructions
- Preheat oven to 375 degrees F.
- Line a cookie sheet with parchment paper.
- Combine dry ingredients (almond flower, gelatin, baking soda, salt) in a large mixing bowl.
- Crack the eggs into a medium mixing bowl. Add vanilla and whisk to combine. Add maple syrup and coconut oil and mix well.
- Pour the wet ingredients into dry ingredients. Beat with a mixer for 1 -2 minutes, or until ingredients are well mixed.
- Add 1 cup of chocolate chips and fold into mixture.
- Using a melon baller tool, or about 2 tbsp, drop balls of dough onto parchment paper and bake for 9-12 minutes.
