Low Carb Chocolate Chip Cookies

Almond flour never tasted so good! Using less inflammatory ingredients and coming in at a net carb count of 2, keep this recipe close!

  • Preheat oven to 375 degrees F.
  • Line a cookie sheet with parchment paper.
  • Combine dry ingredients (almond flower, gelatin, baking soda, salt) in a large mixing bowl.
  • Crack the eggs into a medium mixing bowl. Add vanilla and whisk to combine. Add maple syrup and coconut oil and mix well.
  • Pour the wet ingredients into dry ingredients. Beat with a mixer for 1 -2 minutes, or until ingredients are well mixed.
  • Add 1 cup of chocolate chips and fold into mixture.
  • Using a melon baller tool, or about 2 tbsp, drop balls of dough onto parchment paper and bake for 9-12 minutes.
